Working Principle:

Water seal barrels have a unique design that includes a water channel or rim located at the top of the barrel, on the outside. When closing, the barrel lid is placed so that it dips into the water within this channel, creating a water seal. This seal prevents air from entering the barrel, while simultaneously allowing gases generated during the fermentation process to escape, thanks to a one-way valve located on the top of the lid.

In this way, the barrel is hermetically sealed, enhancing fermentation and preserving the content’s quality from external influences.
